Food Allergens

Common Food allergens are milk, eggs, fish, tree nuts, peanuts, wheat and soybeans, celery, sesame, mustard, sulphur dioxide and sulphates. A food allergy is where the body’s immune system reacts unusually to spesific foods. This should not be confused with Food Intolerance where the immune system reacts through IgG antibodies, where in this condution, the immune system reacts with Spesific IgE antibodies (sometimes mixed reactions occur). Oral allergy syndrome is the type of food allergy especially towards certain proteins in fresh fruits and vegetables, nuts or pollen. This may be avoided by cooking the food .
Interpretation:Depending on the allergen tested, positive the expected reactions are itching, sensation inside the throat, mouth or ears, a raised itchy rash (urticaria), swelling of the face around the eyes, lips, tongue and roof of the mouth(angioderma), vomiting. If the allergy is serious, life threatening reaction will be anaphylaxis.
